Recipe Ingredients for Corn & Zucchini Fritters

410 grams Supersweet Cream Style Corn, No Sugar Added
3 large Egg, Whole
1 large raw Zucchini
0.5 cup Coriander Leaves
1 medium (4-1/8" long) Onions, Spring Or Scallions
0.5 Teaspoon Chilli Powder
1 tsp Cumin
1 tsp Coriander Leaf, Dried
2 tbsp Extra Virgin Olive Oil
1 2/5 oz Plain All Purpose Flour

Recipe Directions for Corn & Zucchini Fritters

Whisk egg whites separately. Combine all other ingredients (except oil) to form a porridgey consistency. Then fold through egg whites. Spray non stick pan with olive oil spray (or lightly grease with oil) and cook 3 batches of 4 fritters. Serve with tamatillo salsa, fresh coriander, sliced avocado and lime wedges.
