A mixture of corn and wheat to make a tasty bread.

Recipe Ingredients for Corn-Wheat Bread

2 tsp salt
3 tbsn sugar
1 1/3 tbsn olive oil
2 cups whole wheat flour
1 2/3 cup cornmeal
3 cups white flour

Recipe Directions for Corn-Wheat Bread

  1. Combine 2 cups of whole wheat flour with 1 2/3 cup cornmeal and 2 cups of white flour. Set the rest of the white flour (1 cup) aside.

  2. Mix in 2 tsp of baking powder, 2 tsp of salt, and 2 tbsn of sugar to the flour.

  3. Add 1 and 1/3 tbsn of oil to the flour, but do not mix it in.

  4. Add 1 and 1/2 tbsn yeast to about a cup of warm water. Add 1 tbsn of sugar to the water as well and wait for the yeast to set.

  5. Add the yeast to the flour, and mix until all the water is mixed in. Get another cup of warm water, and pour it into the flour. Mix again until well mixed throughout.

  6. Add half of the remaining flour and mix it in. Spread the rest out on the table.

  7. Turn over the dough and begin to knead until lightly damp, but not sticky.

  8. Rub a big bowl with oil and let the bread rise for an hour or more.

  9. Divide the dough into two equal halves and place in 8" by 5" bread pans. (Divide according to pan size, of course. Smaller pans, more divisions. You could also divide less for a more "puffy" bread.)

  10. Cover the bread and let rise for at least another hour.

  11. Bake bread at 350 degrees for about 50 minutes, checking for the level of finish.

  12. OPTIONAL: Rub bread with a beaten egg about 40 minutes into cooking to help brown the top more. I mixed the egg with garlic salt and italian seasoning. Just don't overdo it!
