Recipe Ingredients for Corn Tortilla Casserole

3 tbsp. canola oil, divided
1 med-sized onion, chopped
4 ears fresh corn on the cob, kernels off
1/2 lb. shitake mushrooms, stems removed, caps sliced
12 ounces chard, (Swiss) or a bunch, cut into strips
2 poblano peppers, roasted, peeled, seeded, cut into 1/2" pieces
16 oz. Monterey Jack cheese, grated
14 corn tortillas
3 1/2 cups salsa

Recipe Directions for Corn Tortilla Casserole

Heat 2 TB of oil in skillet, add onion, saute until translucent. Add corn and mushrooms, saute until tender. Remove from pan, set aside. Add remaining oil to pan and saute the chard until wilted. Add chard to corn mixture. Add the poblanos to the veggie mixture, stir together. Oil a 9"x13" baking pan spread 1/2 cup of salsa in the bottom. Layer with tortillas. Add more sauce, layer of veggies, layer of cheese, repeat. Bake uncovered for 20-30 minutes until cheese is golden. Cover with foil during last 10 minutes. Let cool for 10 minutes.
