Ingredients 1-1/2 (11 ounce) cans whole kernel corn 1 large tomatoes, diced 1/2 large sweet onions, cut into thin strips 2 green onions, chopped 1/2 bunch cilantro leaves, minced into tiny strips 1 limes, juiced 2 tablespoons and 2 teaspoons rice vinegar kosher salt to taste

28 oz Whole Kernel Sweet Corn
1 Medium Tomatoes
1 large Onions
2 serving Green Onions
0.5 serving, raw Cilantro
1 lime yields Lime Juice
20 grams Rice Vinegar
1 dash Salt, Table

Recipe Directions for Corn, Sweet Onion, and Tomato Salad

In a large bowl, combine corn, tomatoes, sweet onion, green onion, and cilantro. Squeeze lime juice over mixture, and mix in. Stir in rice vinegar to taste; the amount you use will depend on the sweetness of the corn, and the acidity of the lime. Season with kosher salt. Cover, and chill for 45 minutes to an hour. Stir before serving.
