Cooking Light recipe. (Original recipe calls for 1 cup sliced okra, however, I don't like okra so left it out.)

Recipe Ingredients for Corn and Summer Vegetable Saute

1 tbsp canola oil
1/2 cup green onions, chopped (about 4)
2 garlic cloves, minced
1 cup red bell pepper, chopped (about 1)
1 jalapeno pepper, finely diced
1 cup corn, fresh (about 2 ears)
15 ounces black beans, rinsed and drained
1/3 cup cilantro, minced
1/8 tsp salt
1/8 tsp black pepper, freshly ground

Recipe Directions for Corn and Summer Vegetable Saute

  1. Heat oil in large nonstick skillet over medium-high heat. Add onions and garlic; saute 1 minute.

  2. Reduce heat to medium. Add bell pepper and jalapeno; cook 5 minutes.

  3. Add corn; cook 5 minutes.

  4. Stir in beans; cook 2 minutes.

  5. Stir in cilantro; sprinkle with salt and black pepper. (Serving size 2/3 cup)
