Recipe Ingredients for Corn and Spinach Polenta

1 cup water
1/2 tsp salt
1/4 cup cornmeal
1/4 cup yellow corn
1/4 cup spinach, frozen chopped

Recipe Directions for Corn and Spinach Polenta

  1. Bring 3/4 cup of the water to boil. While water is heating, stir 1/4 cup of water into cornmeal. When water comes to boil, add salt. Whisk in cornmeal and water mixture, stirring constantly to avoid lumps. Add corn and spinach.

  2. Serve with Chunky Tomato Sauce.
