Wholewheat pan-cooked fritters with corn, spinach & peppers. Recipe makes 5 'patties'.

Recipe Ingredients for Corn & Spinach Patties

40 g all purpose flour
50 g wholewheat flour
90 ml water
1/8 tsp salt
1 pinch lemon pepper
1 pinch paprika
15 g red bell peppers, diced
1 tsp dried chopped chives
60 g canned corn
15 g spinach, washed, drained & chopped
1/8 tsp bicarbonate of soda
1/2 tsp extra virgin olive oil

Recipe Directions for Corn & Spinach Patties

  1. Mix flours, water, salt and seasonings.

  2. Add in rest of ingredients, except oil, and mix well.

  3. Heat the oil in a frying pan and divide mixture into 5 'patties'.

  4. Cook till golden on both sides. Serve with salsa, ketchup, chilli sauce, chutney or tzatziki.
