My favorite corn chowder, based on a recipe from Williams Sonoma

Recipe Ingredients for Corn Soup

4 cups corn
1 cup red pepper
1 cup onion
6 cups chicken broth
1/2 cups heavy cream
1 tbsp olive oil

Recipe Directions for Corn Soup

  1. Saute the onion in olive oil until translucent

  2. Add the red pepper and saute until it begins to soften

  3. Add the corn and cook for a minute or two longer

  4. Add the chicken broth and cook until the vegetables are done

  5. Puree with an immersible blender

  6. Stir in the cream, add salt and pepper to taste
