Recipe Ingredients for Corn and Shrimp Chowder

4 ears corn
2 scallions, thinly sliced
1 kosher salt and white pepper
1 lb. 26-30 size shrimp, tails removed
3 tbsp. butter
2 c. chicken stock
1/2 c. heavy cream

Recipe Directions for Corn and Shrimp Chowder

  1. Cut kernels from the ears of corn, about 2 Cups.

  2. In small saucepan over med. heat, melt the butter. Add the green onions and saute' until soft (about 3 min.)

  3. stir in the stock, corn and season to taste. Simmer uncovered for 10 min.

  4. Add the cream and stir well. Add shrimp and reduce heat to low. Simmer until shrimp is done.

  5. Serves: 1 Cup portion
