Fresh & light. Perfect for summer. Great on its own, as a side, or as a dip for tortilla chips.

Recipe Ingredients for Corn Salad

12 ears corn
2 pints cherry tomatoes
4 avocados (3 cups, chopped)
1 cup red onion, chopped
1/2 cup fresh cilantro
4 tbsp olive oil
2 tbsp lime juice
1/2 tsp salt
1/2 tsp pepper

Recipe Directions for Corn Salad

  1. Shuck ears of corn and cut corn off the cob.

  2. Quarter the tomatoes.

  3. Chop onion and cilantro finely.

  4. Cut avocado into small chunks. (It will cream as it's mixed in.)

  5. Mix all ingredients in a large bowl. Add oil and lime juice. Add salt and pepper to taste. (I recommend 1/2 tsp of each for a batch the size I've indicated.) You can also zest the lime you used for juice and add the zest in as well.

  6. Mix thoroughly and enjoy! Keep leftovers refrigerated.
