Corn and scallion salad -- Everyday Food

Recipe Ingredients for Corn Salad

10 ears corn
5 green onions
1 red bell pepper
4 tablespoons white wine vinegar

Recipe Directions for Corn Salad

  1. Remove kernels.

  2. Mix with sliced scallions and diced bell peppers (all colors)

  3. Add vinegar, a pinch of tarragon (dried) or a few sprigs of fresh

  4. Season with salt and pepper

  5. May add a pinch of sugar if needed
