Recipe Ingredients for Corn Salad

1 1tsp Olive Oil
3 ear, yields Corn, Sweet, Yellow
1 pepper Peppers, Jalapeno
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
1 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
1.5 cup Black Beans
1 tsp Cumin
1 small Onions
0.5 tsp Garlic Salt
0.5 fruit (2-1/8" dia) Lemons
0.5 tsp Chili Powder

Recipe Directions for Corn Salad

In a skillet, heat olive oil on medium high heat. Slice the corn from the cobs and cook in olive oil until it becomes browned. Turn heat to high and add jalapeno, peppers, (1 cup jicama if you like), onion, cumin and chili powder. Cook for 2-3 minutes. Transfer into a bowl. Rinse a can of black beans and stir into the corn mixture. Toss in lemon (or lime) juice, garlic salt and fresh cilantro. Serve warm or chilled.
