Corn Salad with Creamy Italian Vinaigrette

Recipe Ingredients for Corn Salad with Creamy Italian Vinaigrette

1/4 cup balsamic vinegar
1/4 cup olive oil
1/4 cup low fat Mayonnaise
1 tbsp chopped garlic
1 tsp italian seasoning
4 cups corn
1 small red onion
12 cherry tomatoes
1 small zucchini or cucumber
1/4 cup basil

Recipe Directions for Corn Salad with Creamy Italian Vinaigrette

  1. Combine vinegar, olive oil, mayonnaise, garlic and Italian seasoning in small bowl with wire whisk. Season, if desired, with salt and pepper; set aside.

  2. Combine cooked and cooled corn, onion and 1/4 cup vinaigrette in medium bowl. Gently fold in tomatoes (quartered), zucchini (diced small or shredded) and basil. Drizzle with remaining vinaigrette. Serve at room temperature.
