Recipe Ingredients for Corn and Rice Medley

2 tablespoons olive oil, divided
1 cup basmati rice
2 cups water
2 cups corn kernels, fresh
1 small onion, sliced thinly
1/2 teaspoon white sugar
1 salt to taste
1 ground black pepper to taste
2 tablespoons green peas

Recipe Directions for Corn and Rice Medley

  1. Heat 1 tablespoon oil in a small saucepan. Stir in the rice, add the water, and bring to a boil. Reduce heat, cover and simmer for 16 to 18 minutes, or until water is absorbed and rice is tender.

  2. Meanwhile, heat 1 tablespoon oil in a large skillet over medium heat. Stir in corn, peas, onion, sugar, salt and pepper. Cook, stirring occasionally, for 4 to 6 minutes, or until tender.

  3. In a serving bowl combine cooked rice, and corn mixture.
