Recipe Ingredients for corn, rice and bean burritos

1 1/3 cup frozen corn
1 medium onion
1 medium green pepper
1 tbs olive oil
2 garlic cloves
1 tsp chili powder
1/2 tsp cumin
15 oz black beans
1 1/2 cup brown rice
8 flour tortillas
3/4 cup cheddar cheese
1/2 cup plain yogurt
1/2 cup salsa

Recipe Directions for corn, rice and bean burritos

  1. in a large skillet, saute the corn onion and pepper in oil until tneder. Add the garlic, chili powder, cumin; cook 1 minute longer. Add beans and rice, heat through.

  2. Spoon 1/2 cup filling into center of each warmed tortilla. Top with cheese, yogurt and salsa.
