Really great recipe for vegetarian polenta lovers.

Recipe Ingredients for Corn on Corn

3 tomatoes, small
2 yellow squash, small
3/4 cup water
1 tsp garlic
1/2 cup Red Onion, diced
6 tsp olive oil
2 tsp Apple Cider Vinegar
1 tsp salt
1/2 tsp Sage
1 can Canned Corn
1/2 tsp Thyme
1 cup Shitake Mushrooms, fresh
2 cups cooked cornmeal, in polenta form

Recipe Directions for Corn on Corn

Cook everything like a pasta sauce in a big frying pan. Save the polenta for last and fry seperately. I usually let the sauce simmer for up to four hours. Cover the polenta with the sauce when serving.
