Savory and rich with lots of corn flavor, great as a side dish on the holidays.

Recipe Ingredients for Corn Pudding

1 tbsp. canola oil
1 1/2 cup red onion, finely chopped
1 clove garlic, minced
1/2 tsp. nutmeg
1 tsp. black pepper
4 cups frozen corn
1 cup white wine
2 cups 1% milk

Recipe Directions for Corn Pudding

  1. Heat a large frying pan with deep sides on medium-high heat, and add the oil to the pan.

  2. Saute the onion and garlic in the canola oil.

  3. Add the nutmeg and pepper.

  4. Add the corn and stir.

  5. Once the corn is heated, pour in the white wine.

  6. When the white wine is reduced and thickened, pour in the milk.

  7. Allow the milk to boil and reduce for about 7 to 8 minutes.

  8. Allow the corn mixture to cool, then pour into a food processor.

  9. Process the mixture for about 3 minutes, or until mostly smooth.

  10. Serve immediately, or strain the remaining corn bits and then serve.
