Corn Pudding Recipe

A savory and slightly sweet custard used as a side dish, usually for winter meals. I use canned corn, but frozen and fresh both work.

Recipe Ingredients for corn pudding

15 ounces whole kernel corn, canned and drained
1 cup skim milk
1 egg
1 tablespoon flour
1/8 teaspoon salt
1/8 teaspoon pepper

Optional:
1/2 cup shredded cheddar cheese
2 ounces green chili peppers, chopped

Recipe Directions for corn pudding

  1. Drain off the excess liquid from the canned corn. If using frozen, just don't worry about it.

  2. Take a cup of milk, break the egg into it, mix to break up the yolk into the milk.

  3. Add in the flour and seasonings to the milk and egg mix.

  4. Place the corn in an oven safe baking dish.

  5. Pour the liquid over the corn and give it a quick stir to settle the liquid between the kernels.

  6. Bake at 325 for an hour or until set.

  7. Variations: Add cheese, green chili peppers, or a combination of both for a savory fun treat.
