Recipe Ingredients for corn pudding

2 teaspoons unsalted butter
1 small onion
1 garlic clove
1 teaspoon thyme
1 cup canned corn
1/2 teaspoon ground black pepper
1/2 teaspoon ground nutmeg
1 pinch cayenne pepper
2 tablespoons corn starch
1 3/4 cups 1% milk
1 cup Parmesan cheese
1/2 cup mozzarella cheese
3 eggs

Recipe Directions for corn pudding

  1. Preheat oven to 350

  2. heat butter in a frying pan, add onion, garlic, thyme. Cook over medium heat for 3 minutes. Add half the corn and cook for another 2-3 minutes. Set aside, then season with pepper, nutmeg and cayenne.

  3. Place the remaining corn in a blender with the cornstarch, milk and eggs and blend until smooth. Fold in the corn mixture, herbs and both cheeses.

  4. Pour into baking dish, place in a hot water bath, and cook until firm, about 1 hour. Let it stand for 10 minutes before serving.
