A savory side dish with optional addition of zucchini

Recipe Ingredients for Corn Pudding

425 grams cream corn (15 ounce can)
400 grams canned yellow corn (14.5 ounce can)
228 grams Jiffy corn muffin mix (1 box)
1 cup light sour cream
1 tbsp butter
1 egg
1 cup zucchini, cut in thin half moons (optional)

Recipe Directions for Corn Pudding

  1. Preheat oven to 350 degrees.

  2. Spray a 9 x11 casserole with non-stick spray

  3. Steam zucchini for 2-3 minutes in microwave.

  4. Mix remaining ingredients in a large bowl. Fold in zucchini.

  5. Pour into casserole and bake for 45 minutes or until set.

  6. Rest 5-10 minutes before serving.
