Recipe Ingredients for Corn Pudding

6 ears fresh corn (may substitute 3 cups well-drained canned or frozen whole kernel corn)
1 cup heavy cream
3 eggs
2 tbsp sugar
1 tsp salt
5 1/2 tbsp flour
1 tsp baking powder
1/4 cup butter, melted
1 tbsp finely chopped fresh parsley
1 tbsp freshly grated Parmesan cheese
1 pinch allspice
1 pinch cayenne pepper

Recipe Directions for Corn Pudding

Position the oven rack to the center position. Preheat the oven to 300?. Lightly butter six 6 oz ramekins (or one 2 quart casserole) and set aside. Slice corn from the cob and place in a bowl. In a food processor or blender, puree 2/3 of the corn with the cream, eggs, sugar and salt. Return the pureed mixture to the bowl of whole corn. Add the remaining ingredients and mix well. Fill each prepared ramekin with about ½ cup of the corn mixture. Place the ramekins in a roasting pan on the center rack. With a pitcher, carefully add water to the pan until it reaches halfway up the sides of the ramekins. Bake for 60 minutes or until the puddings are set.
