Corn, potatoes, green onions and red pepper in chicken broth

Recipe Ingredients for Corn and Potato Soup

1/2 c. green onions
1 c. red bell pepper
1 tsp. olive oil
2 c. yellow corn
3 c. fat-free chicken broth
3 c. chopped potatoes
1/4 c. chopped parsley
1/2 tsp. salt
1 tsp. Old Bay seasoning
1/2 tsp. ground thyme
1/8 tsp. (or less) cayenne pepper

Recipe Directions for Corn and Potato Soup

Saute chopped green onions and chopped red pepper. Add corn, chicken broth, Old Bay seasoning, thyme, cayenne pepper & potatoes. Bring to a boil. Reduce heat, cover and simmer 10 minutes until potatoes are tender. Remove from heat, stir in parsley and salt. Place 1-1/2 c. in each of 4 bowls. Top with grated parmesan, if desired. (Not included in calorie count.)
