Recipe Ingredients for Corn and Potato Chowder

1 tablespoon olive oil
1 cup small onion, chopped
1 cup chopped celery
2 russet potatoes
3 cups soy milk
1 cup corn
1/2 cup peas

Recipe Directions for Corn and Potato Chowder

  1. Heat the oil in a 3-4 quart saucepan. Add the onion and celery and saute over medium heat until the vegetables soften, 7-8 minutes, stirring frequently.

  2. Add the potatoes and milk. Cover and simmer until the potatoes are tender, about 20 minutes. Mash some of the potatoes in the pot with a potato masher to thicken the soup. Add the corn kernels. If you like peas, add them, too. Cook just until heated through, 1-2 minutes. Add salt, and season with pepper to taste.

  3. Ladle the soup into a bowl, and sprinkle with parsley if you desire.
