A little spicy, but really really delicious. Served in a bread bowl with a side of fruit and you'll be full for the rest of the night!

Recipe Ingredients for Corn and Poblano Chowder

2 tablespoons butter
1 medium onion, coarsely chopped
3 celery stalks, coarsely chopped
8 pepper chilies
28 oz creamed corn
28 ounces chicken broth
1 cup Fat Free Half & Half
2 teaspoons sugar
1 pound uncooked shrimp, peeled, deveined, coarsely chopped
1/4 cup shredded low fat cheese

Recipe Directions for Corn and Poblano Chowder

  1. Chop celery and onion. Saute in butter until soft and tender. Add chilies and continue to cook until chilies are soft - about 10 minutes.

  2. Add corn and next three ingredients. Bring to a boil. Reduce heat. Add shrimp and simmer until shrimp are cooked through.

  3. Serve up and top dress with shredded cheese.
