Recipe Ingredients for Corn Pancakes

1.5 cup Muffin Mix
1 large Egg, Whole
0.75 cup Milk, Lowfat, Fluid, 1% Milkfat
2 tbsp Shortening Sticks

Recipe Directions for Corn Pancakes

Blend ingredients together, batter will be a little lumpy. Cook on a hot griddle sprayed with cooking spray (I use Olive Oil) turn when pancakes have bubbles in the center.
