Recipe Ingredients for Corn Pancakes

1 cup Corn, Sweet, Yellow
2 large Egg, White
2 cup Milk, Nonfat, Fluid
2 tbsp Vegetable Oil, Canola
1.5 cup Cornmeal, Degermed, Enriched, Yellow
1 tsp Baking Soda
0.5 cup Wheat Flour, White, All-purpose, Enriched, Bleached
1 tsp Baking Powder
1 tsp Salt, Table
1 tsp Sugars, Granulated
0.5 cup chopped Green Onions

Recipe Directions for Corn Pancakes

  1. Let corn thaw in a bowl.

  2. Meanwhile, using an electric mixer, beat egg shites to soft peaks; set aside.

  3. In a seperate bowl; mix together the egg yolks, milk, and oil.

  4. In aother bowl; whisk together cornmeal, flour, baking soda, baking powder, salt and sugar. Add milk mixture to dry ingredients mixing until just combined. Stir in the corn and green onions. Gently fold in egg whites. Let stand 10 minutes before cooking.

  5. Spray pan with cooking spray and heat over medium. When hot, pour 1/4 cup batter per pancake into pan; cook until the underside is golden and you see bubbles along teh edges; flip and cook for 1 to 2 mins longer. Keep warn in a 250 degree oven while the rest are cooking.

  6. Serve with a dollop of plain yoghurt and steamed vegetables.
