These are my husband's favorite breakfast.

Recipe Ingredients for Corn Pancakes

3/4 cup flour
1 1/2 cups cornmeal
1/4 cup sugar
4 tsp baking powder
1 tsp salt
2 eggs, lightly beaten
1/4 cup vegetable oil
1 cup milk
1 cup corn, fresh or canned

Recipe Directions for Corn Pancakes

  1. Mix dry ingredients in large bowl

  2. Make well in center and add the wet ingredients

  3. Stir until batter has few lumps. Do not overmix

  4. Stir in corn

  5. Cook pancakes on non-stick griddle.
