Lightened by substituting shortning to canola oil, half egg and to egg whites. Serving size 1 muffin.

Recipe Ingredients for Corn muffins or sticks

2 cups corn meal
3 teaspoons baking powder
1 teaspoon salt
1 tablespoon sugar
1/2 cup water
1 cup skim milk
1/4 cup egg whites
1 egg
2 tablespoons canola oil
1 cooking spray

Recipe Directions for Corn muffins or sticks

Preheat oven to 400 degrees. Sift together meal, baking powder, salt and sugar substitute. Add water and milk and stir until well mixed. Then add egg whites and beat until blended. Stir in oil. Spray muffin tins and fill 3/4 full with batter. Bake for 25 minutes.
