Recipe Ingredients for Corn Muffins

1 cup flour
1 cup cornmeal
2 tbsp sugar
1 tbs baking powder
1 tsp salt
1 egg
1 cup milk
1/4 cup olive oil

Recipe Directions for Corn Muffins

  1. Heat oven to 425. Grease 12 medium muffin cups

  2. Combine flour, cornmeal, sugar, baking powder, and salt in a large bowl.

  3. Beat egg in small bowl. Add milk and oil. Stir. Add to flour mixture. Beat just until smooth with large spoon. Fill muffin cups 3/4 full.

  4. Bake at 425 for 2 to 15 minutes or until lightly browned.
