Corn muffin recipe for only four servings.

Recipe Ingredients for Corn Muffins

1/2 cup whole-wheat flour
1/3 cup yellow cornmeal
1 tbsp. sugar
1 tsp. baking powder
1/4 tsp. salt
1/3 cup low-fat buttermilk
2 tbsp. butter, melted
1 large egg white

Recipe Directions for Corn Muffins

Combine flour, cornmeal, sugar, baking powder and salt in a medium bowl and stir with a whisk. Combine buttermilk, melted butt and egg white. Add to flour mixture, stirring just until moist. Spoon batter into 4 muffin cups coated with cooking spray. Bake at 425 degrees for 12 minutes or until muffins spring back when lightly touched.
