A quick easy muffin to serve with soup or chili

Recipe Ingredients for Corn Muffins

1 1/2 cups corn meal
1/2 cup all purpose flour
1/4 cup butter
1 1/2 cups buttermilk
2 tsp baking powder
1 tsp sugar
1 tsp salt
1/2 tsp baking soda
2 eggs

Recipe Directions for Corn Muffins

  1. Heat oven to 450 degrees.

  2. Mix all ingredients; beat vigorously 30 seconds. Fill muffin tin with papers and fill 14 muffin cups 7/8 full.

  3. Bake about 20 minutes.
