Corn muffins with kernel corn, honey

Recipe Ingredients for Corn Muffins

1 cup unsweetened applesauce
1/2 tsp table salt
1 cup fat-free skim milk
1 large egg
1 tsp baking powder
1 cup uncooked cornmeal
3/4 cup whole wheat flour
1 cup canned yellow corn
4 tbsp honey

Recipe Directions for Corn Muffins

  1. Preheat oven to 350. Spray an 8 x 8 pan or a muffin tin with cooking spray.

  2. Mix cornmeal, flour, salt, and baking powder in a large bowl. Beat the egg in another bowl, add the milk and the applesauce -- stir.

  3. Add wet bowl contents to dry ingredients, combining until just blended but all dry ingredients are moistened.

  4. Pour the batter into the pan and bake for 35 minutes or into the muffin tin and bake for 20 minutes.
