Recipe Ingredients for Corn Muffins

1 cup Cornmeal
1 cup soy flour
1/2 tsp salt
4 tsp baking powder
1 tbsp splenda brown sugar
2 egg whites
1 cup almond breeze
1/3 cup unsweetened applesauce

Recipe Directions for Corn Muffins

  1. Combine all dry ingredients. Add remaining ingredients and beat until smooth. Divide into 12 muffin cups and bake in preheated 350 degree oven for about 20 minutes.

  2. These freeze well and are great warmed in the microwave.
