Filled with corn and cheddar, these are moist and yummy. You can add seasonings as well: chives, canned green chilis, garlic powder, cayenne powder, etc.

Recipe Ingredients for Corn Muffins

1 cup reduced fat cheddar
1 cup corn
1 egg
1 1/3 cup milk
1/4 cup oil
2 cups cornmeal
1 tbsp baking powder
1 tsp salt

Recipe Directions for Corn Muffins

Preheat oven to 450. Mix all ingredients well. Pour into greased muffin tin. Top with extra cheese if desired. Bake 15-20 minutes.
