Recipe from the Fannie Farmer cookbook, using egg beaters rather than an egg, and butter rather than shortening.

Recipe Ingredients for Corn Muffins

3/4 cup yellow cornmeal
1 cup flour
1/3 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt
1 cup skim milk
1/4 cup egg beaters
2 tablespoons butter, melted

Recipe Directions for Corn Muffins

  1. Preheat oven to 425 F.

  2. Grease muffin tins well or use liners.

  3. Mix cornmeal, flour, baking powder, and salt in a large bowl.

  4. Combine milk, egg, butter, and sugar in a second bowl.

  5. Stir liquid ingredients into dry ingredients until combined (batter will be slightly lumpy.)

  6. Spoon into muffin cups. Bake 20 minutes or until done.
