Recipe Ingredients for Corn Muffins with Raspberries

1/2 cup corn
3 tbsp. butter, unsalted
1 3/10 oz. water
1 tsp. lemon juice
1 tsp vanilla
1 egg, large
1 cup flour, all purpose
3 oz. sugar
1 tsp baking powder
1/2 tsp salt
1/4 tbsp baking soda
1 cup raspberries, fresh
1 tbsp flour, all purpose
1 tbsp. sugar, confectioners

Recipe Directions for Corn Muffins with Raspberries

  1. Combine corn and next 5 ingredients (corn through egg) in a blender or food processor; process until smooth.

  2. Combine 1 cup flour, sugar, baking powder, salt and baking soda in a large bowl; stir well wtih a whisk. Add corn mixture to flour mixture, stirring just until combined.

  3. Toss raspberries with 1 tbsp. flour; fold into batter. Pour batter into prepared muffin pan. Bake at 325 for 20 minutes or until a wooden pick comes out clean. Cool in pan 10 minutes on a wire rack. Remove from pan and cool completely on a wire rack.
