1 1/4 cups cornmeal
1 tablespoon baking powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1 cup skim milk
1/4 cup canola oil
2 large eggs
3/4 cup flour
6 oz whole kernel corn

Recipe Directions for Corn muffins made with skim milk

  1. Heat oven to 400 F. Spray a 12-cavity muffin tin with nonstick spray.

  2. In a large bowl stir the cornmeal and flour together. Add baking powder, salt, and pepper and blend well. Add eggs, milk, and oil; blend well. Fold in corn. Fill 12 muffin cups with the batter. Bake 20 minutes at 400 F. Turn out of pan and cool completely on wire racks.
