(3 servings of 2 muffins each) And don't forget--when making muffins mix the batter only just enough to moisten!

Recipe Ingredients for Corn Muffin

1/2 cup cornmeal
1/2 cup all-purpose flour
3 tablespoons sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/2 egg, beaten
2 tablespoons vegetable oil
1/2 cup milk

Recipe Directions for Corn Muffin

  1. Preheat oven to 400 degrees F (200 degrees C). Grease muffin pan or line with paper muffin liners.

  2. In a large bowl, mix together corn meal, flour, sugar, baking powder and salt.

  3. Mix together egg, oil and milk in another bowl.

  4. Stir gently to combine. Spoon batter into prepared muffin cups.

  5. Bake at 400 degrees F (200 degrees C) for 15 to 20 minutes, or until a toothpick inserted into a muffin comes out clean.
