Inspired by the traditional Japanese sweet kuzumochi, but made with much cheaper ingredients

Recipe Ingredients for Corn mochi

25 g corn starch
13 g sugar
90 ml water
2 tsp soy flour

Recipe Directions for Corn mochi

  1. Dissolve the corn starch and sugar in the water

  2. Heat over medium-low flame, stirring constantly

  3. After a while (5-10 minutes) the opaque liquid will start to thicken. Keep stirring!

  4. Continue stirring until the entire mixture is a thick, somewhat transparent gel

  5. Remove from heat, scrape into a mold, and refrigerate

  6. Serve once cool, dusted with the soy flour (specifically kinako, a Japanese roasted soybean flour). If you're feeling indulgent, drizzle on some molasses or black sugar syrup. You can also try fruit preserves or fresh fruit with honey or syrup.
