Crepes made with whole wheat flour and corn meal

Recipe Ingredients for Corn Meal Whole Wheat crepes

1/4 cup fat free yogurt, plain
1/4 cup fat free cottage cheese
2 T whole wheat flour
2 T corn meal
2 egg whites
2 T fat free milk
2 oz Mozzarella (2 one-ounce string cheese sticks)
1 cup cherry tomatoes, diced
1/4 cup green onions, chopped

Recipe Directions for Corn Meal Whole Wheat crepes

  1. Heat nonsitck 8" skillet to medium. Wipe with paper toewel dipped in olive oil, or cooking spray.

  2. Mix all ingredients, through milk, in blender.

  3. Pour approx 1/4 cup into hot skillet, and cook until bubbles form and slightly dry ( 1 /12 to 2 minutes)

  4. Flip. Cook approx 1 minute more.

  5. Place on plate.

  6. Fill each with tomatoes and green onions

  7. Cut up 1/2 of each string cheese stick on each crepe.

  8. Fold in half.
