Delicious recipe when made with Hodgson Mill, Whole Grain yellow corn meal.

Recipe Ingredients for Corn Meal Muffins

1 1/2 cup cornmeal
1 cup white flour, unbleached
1 1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 cup sugar
1/2 teaspoon salt
1 cup buttermilk
1 egg
1/4 cup vegetable oil

Recipe Directions for Corn Meal Muffins

  1. Preheat oven to 400F.

  2. Prepare muffin tin by lining with muffin papers or spraying with no-stick cooking spray.

  3. Mix cornmeal, unbleached flour, baking powder, baking soda, sugar and salt in a large bowl and set aside.

  4. In another bowl, combine buttermilk, egg and vegetable oil.

  5. Pour liquid ingredients into dry ingredients and mix just until blended.

  6. Let this mixture sit in the bowl for 5 minutes.

  7. Spoon batter into muffin tin, filling them 3/4 full.

  8. Bake for 15 minutes or until tops of muffins are golden brown.
