Simple and delicious, but corn is not easy to scrape from cob and makes a mess. Worth it though!

Recipe Ingredients for Corn and Green Bean Salad

1 lb green beans, fresh, snapped in half
1 cup corn, kernels, fresh, 2-3 ears
2 tbsp cider vinegar
2 tsp olive oil
2 tsp mayonnaise, low fat
2 tsp water
1/2 tsp black pepper
1/4 tsp salt
1 large tomato, diced
2 tbsp chives, fresh
3 tbsp basil, fresh, chopped

Recipe Directions for Corn and Green Bean Salad

  1. Bring a large pot of water to boil

  2. Add green beans, cover and return to boil.

  3. uncover and cook 2 minutes

  4. Add corn and cook uncovered 1-2 minutes until crisp-tender.

  5. Rinse vegetables under cold running water.

  6. Combine vinegar, water, oil and pepper in a large bowl and whisk together.

  7. Stir in chives and tomato, then vegetables.

  8. Let stand at room temperature about 30 minutes.
