A nice alternative side dish for Mexican or Southwest food in place of rice or tortillas. Great topped with sour cream and a sprinkling of chives.

Recipe Ingredients for Corn Fritters

1 cup corn meal
1 cup boiling water
1/2 tsp chili powder
1/2 tsp black pepper
1/4 tsp celery salt
1 tsp dried chives
1/2 cup Bisquick
1/4 cup 1% milk
1 egg
1/4 lb green pepper, minced
1/10 lb green chile, minced
3/4 cup creamed corn

Recipe Directions for Corn Fritters

  1. Saute the green pepper and chile until they sweat. Set aside to cool.

  2. Stir boiling water into corn meal until it forms a thick mush.

  3. Add Bisquick and egg and stir.

  4. Add milk gradually until desired consistency is achieved. The batter should be thin enough to pour but not runny, like pancake batter.

  5. Add seasonings and peppers and mix thoroughly.

  6. Spoon batter onto hot griddle or nonstick frying pan. Cook for 3 to 4 minutes on each side. Serve immediately.
