Light quick bread with whole kernal corn

Recipe Ingredients for Corn Fritters

1 1/3 cups flour
1 tsp baking powder
1/4 tsp black pepper
2 eggs, beaten
2/3 cup 2% milk
1 tsp worchestershire sauce
1 tsp canola oil
12 oz can corn, drained

Recipe Directions for Corn Fritters

  1. Heat canola oil in a deep fryer to 185C

  2. In a medium mixing bowl combine dry ingredients.

  3. In a small mixing bowl blend together wet ingredients excluding corn.

  4. Make a well in the dry ingredients and add liquid mixture all at once.

  5. Stir until batter is smooth.

  6. Stir in the drained corn.

  7. Drop by tablespoon fulls into the hot oil.

  8. Cook only as many fritters as will float uncrowded in the oil.

  9. Deep fry 3 to 4 minutes until golden turning often with a fork.

  10. Drain over oil before removing to paper towel.

  11. Serve warm.
