Recipe Ingredients for Corn Fritters (9.8)

70 g flour
70 g rice flour
1/4 t baking soda
1/2 t cumin
1 t ground coriander
1 large egg
1 T lemon juice
1/2 c water
290 g corn, fresh is best
1/4 c scallions, chopped
1/4 c cilantro, chopped
1/4 c canola oil

Recipe Directions for Corn Fritters (9.8)

  1. mix dry ingredients in small bowl

  2. mix egg, lemon, and water in small bowl

  3. mix scallions, cilantro, and corn in med-large bowl

  4. add wet ingredients to dry to make a batter; add batter to corn mixture and combine

  5. heat a skillet to around 375 and add canola oil

  6. spoon 1/8-1/4 c batter onto the skillet for each fritter
