1/2 cup chopped onion
1 teaspoon olive oil
1/2 cup frozen corn
1/4 cup edamame
1/4 cup chopped red bell pepper
1/2 teaspoon cumin
1/16 teaspoon salt

Recipe Directions for Corn and Edamame Succotash

  1. In a large skillet saute the onion in the olive oil

  2. Add the rest of the ingredients, stirring well, then cover the skillet and saute on a medium low flame until cooked, about 15 minutes
