A quiche like cassarole (but lower fat), best made with fresh corn and fresh lump dungeness crab.

Recipe Ingredients for Corn and Crab Casserole

21 g center cut bacon
5 ears corn, corn cut off of cob
1 sweet onion, chopped
2 tbs fresh thyme or 1 tsp dried thyme
16 oz crab
2 tomatoes
2 cups 1% milk
2 jumbo eggs
2 cups mozzarella cheese
2 tomatoes
1 Salt and pepper to taste

Recipe Directions for Corn and Crab Casserole

  1. Heat oven to 325

  2. Heat a large skillet over medium high

  3. Cook bacon until crispy, remove bacon, but don't wipe pan.

  4. Cook onion for ~1 minute, add thyme and corn. Cook for ~10 minutes or until corn is cooked and onion is translucent. Add salt to taste. Move to a bowl to cool.

  5. Mix beat eggs, add in milk, and fold in cheese.

  6. Add crab to the corn mixture. Add in the egg mixture, blend well.

  7. Pour in to 8"x8" square baking pan, these can also be baked in individual ramekins.

  8. Slice tomato and top casserole

  9. Bake ~1 hour or until set
