Recipe Ingredients for Corn Coulis and Tomato Salad

1 teaspoon shallot
1/4 teaspoon garlic
4 teaspoons olive oil
3/4 cup corn
1 teaspoon fresh basil
1/4 teaspoon salt
1/8 teaspoon black pepper
1/2 cup half and half
1 cup tomatoes, diced
1 tablespoon fresh basil

Recipe Directions for Corn Coulis and Tomato Salad

  1. Sautee shallots and garlic in olive oil; toss in corn, teaspoon basil, salt and pepper. Add half-and-half, scraping up brown bits. Puree in blender. Pass though fine sieve.

  2. Chop tomatoes and toss with tablespoon of basil. Add Balsamic vinegar if desired.
