New England style clam chowder with corn

Recipe Ingredients for Corn and Clam Chowder

2/3 cups canned corn, drained
3 lbs white potatoes
26 oz clams
1 medium onion
4 cloves garlic
1 tablespoon dried parsley flakes
1/2 stick butter
1/2 cup half and half
1/2 teaspoon pepper

Recipe Directions for Corn and Clam Chowder

  1. Peel and small dice potatoes. Open and drain 4 6.5 oz cans of clams with liquid; reserve liquid. Peel and small dice onion. Mince garlic.

  2. Sweat onion and garlic in butter until transparent. Add reserved clam juice and about 1/2 cup water to the onion/garlic mixture. Simmer gently for about 10-155 minutes until potatoes are just cooked through. Add corn (Green Giant Niblets are best), heat gently through. Add parsley flakes (or minced fresh parsley if available) and pepper. If you wish to add salt, add it with the clam juice while the potatoes cook.
