Recipe Ingredients for corn chowder

0.33 tbsp Avocado Oil
0.5 cup, sliced Onions
45 grams Peppers, Sweet, Green
1 stalk, medium (7-1/2" - 8" long) Celery
270 grams Russet Potato
16 fl oz Organic Low Sodium Chicken Broth
209 grams Cream Style Corn
1 cup Frozen Cut Corn

Recipe Directions for corn chowder

  1. Fine dice Onion, pepers, celery and sautee in the avocado oil.

  2. Peel and dice the potato (this was one medium potato weighing 272 grams) and add to the pot.

  3. Add two cups of the chicken broth and cook until potatoes are just about done. Mash roughly (or whatever your preference is)

  4. Add creamed corn - I used 1/2 of the can or 209 grams.

  5. You could stir in spinach or whatever other vegetables you would like to add.

  6. Add the frozen corn.
